beet cured salmon with pickled onions, mojo verde and crispy pork skin

Cogollos con Boquerones y Migas
grilled romaine lettuce with white anchovy, dressing and toasted bread crumbs

Manitas con Gambas
stewed pork trotters with sofrito Ibérico, oloroso and seared shrimp

paella-style rice with squid sofrito and head-on shrimp
